    Prepare the Brisket

    If using pre-cooked brisket, slice it thinly. If cooking from raw, season the brisket with salt and black pepper, then smoke or slow-cook until tender. Slice thinly and set aside.

    Fry the Eggs

    In a skillet, melt 1 tablespoon of butter over medium heat. Crack the eggs into the skillet and cook until the whites are set and the yolks are cooked to your liking. Season with salt and pepper.

    Assemble the Sandwich

    Spread BBQ sauce on one side of each slice of Texas toast. On two slices, layer the sliced brisket, a slice of white cheddar cheese, and the fried eggs. Top with the remaining slices of Texas toast, BBQ side down.

    Grill the Sandwich

    In the same skillet, melt the remaining tablespoon of butter. Place the assembled sandwiches in the skillet and grill over medium heat until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.

    Remove the sandwiches from the skillet, cut in half, and serve hot.
