Preheat the oven to 350°F (175°C). Tear the stale bread into bite-sized pieces and place them in a large bowl.

In a separate bowl, whisk together the milk, heavy cream, eggs, granulated sugar, vanilla extract, cinnamon, and salt until well combined.

Combine and Soak
Pour the custard mixture over the bread pieces, ensuring all pieces are soaked. Let it sit for 15 minutes.

Add Pecans
Gently fold in the pecans into the soaked bread mixture.

Transfer the mixture to a greased baking dish and bake for 45-50 minutes, or until the top is golden and the custard is set.

Prepare Brandy Caramel
In a saucepan, combine the brown sugar and brandy over medium heat. Stir until the sugar dissolves and the sauce thickens, about 5-7 minutes.
