Pasta Preparation

    Cook the Pasta

    In a large pot, bring salted water to a boil. Add the elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Cheese Sauce Preparation

    Make the Roux

    In a large saucepan over medium heat, melt 1 cup of butter. Once melted, add 0.5 cup of all-purpose flour, whisking continuously for about 2 minutes until the mixture is golden and bubbling.

    Add Milk

    Gradually whisk in 4 cups of milk, ensuring there are no lumps. Continue to cook, stirring constantly, until the mixture thickens and coats the back of a spoon.

    Add Cheese

    Reduce the heat to low, then add 4 cups of shredded cheddar cheese, 2 cups of shredded smoked gouda, and 8 oz of softened cream cheese. Stir until all the cheese is melted and the sauce is smooth.

    Season the Sauce

    Stir in 1 tsp of salt, 0.5 tsp of black pepper, 1 tsp of garlic powder, and 1 tsp of onion powder. Mix well to combine.

Combine and Bake

    Combine Pasta and Cheese Sauce

    In a large mixing bowl, combine the cooked macaroni with the cheese sauce. Stir until the pasta is evenly coated.

    Prepare Topping

    In a small bowl, mix together 1 cup of breadcrumbs, 0.5 cup of grated parmesan cheese, and 1 tsp of paprika. Drizzle with 2 tbs of melted butter and stir to combine.

    Assemble the Dish

    Preheat the oven to 350°F (175°C). Transfer the macaroni and cheese mixture into a greased baking dish. Evenly sprinkle the breadcrumb mixture on top.

    Bake

    Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and crispy.

    Remove from the oven, let cool for a few minutes, then serve hot and enjoy your smoked mac n cheese!
