Preparation of Chicken

    Season the Chicken

    In a large bowl, combine the smoked paprika, garlic powder, onion powder, salt, and black pepper. Add the chicken breasts and coat them evenly with the spice mixture.

    Smoke the Chicken

    Preheat your smoker to 225°F (107°C). Place the seasoned chicken breasts in the smoker and smoke for about 2-3 hours, or until the internal temperature reaches 165°F (74°C).

    Shred the Chicken

    Once the chicken is cooked, remove it from the smoker and let it rest for 10 minutes. Then, shred the chicken using two forks and mix it with the buffalo sauce in a bowl.

    Prepare the Buns

    While the chicken is resting, lightly toast the brat buns on a grill or in a toaster until golden brown.

    Build the Sandwich

    Place a generous portion of the shredded buffalo chicken on each toasted brat bun. Top with a slice of provolone cheese.
