Method

Preparation of Beans

    Soak the Beans

    In a large bowl, combine the dried kidney beans and black beans. Cover them with water and soak for at least 8 hours or overnight. Drain and rinse before cooking.

    Cook the Beans

    In a large pot, add the soaked beans and 8 cups of fresh water. Bring to a boil, then reduce the heat to low and simmer for about 1.5 to 2 hours, or until the beans are tender.

Prepare the Seasoning

    Mix the Seasoning Blend

    In a small bowl, combine the smoked paprika, garlic powder, onion powder, ground cumin, black pepper, salt, and brown sugar. Stir well to ensure all ingredients are evenly mixed.

Prepare the Apples

    Chop the Apples

    Core and chop the fresh apples into small cubes. You can leave the skin on for added texture and nutrients.

Combine and Smoke

    Combine Ingredients

    Once the beans are tender, drain any excess water, and return them to the pot. Add the seasoning blend, chopped apples, and liquid smoke. Stir until all ingredients are well combined.

    Smoke the Beans

    Transfer the bean mixture to a smoker or a grill set up for indirect heat. Add wood chips of your choice (preferably hickory or applewood) and smoke for about 1 to 2 hours, or until the beans have absorbed the smoky flavor.
