Prepare the Pork
Trim any excess fat from the pork shoulder and cut it into large chunks if necessary.

Mix the Rub
In a small bowl, combine brown sugar, paprika, salt, black pepper, garlic powder, onion powder, and cayenne pepper. Mix well.

Season the Pork
Rub the spice mixture all over the pork shoulder, ensuring it's evenly coated.
Cooking

Cook the Pork
Place the seasoned pork shoulder in a slow cooker. Add apple cider vinegar and water. Cover and cook on low for 8 hours or high for 4 hours.

Shred the Pork
Once cooked, remove the pork from the slow cooker and let it rest for a few minutes. Use two forks to shred the pork into bite-sized pieces.

Add BBQ Sauce
Return the shredded pork to the slow cooker. Pour in the gluten-free BBQ sauce and mix well to combine.

Heat Through
Cover and cook on low for an additional 30 minutes to allow the flavors to meld.
