    Boil the Potatoes

    Wash and peel the potatoes. Cut them into quarters and place them in a large pot. Cover with water and add a pinch of salt. Bring to a boil over medium-high heat. Cook for about 15-20 minutes or until they are fork-tender.

    Chop the Vegetables

    While the potatoes are boiling, finely chop the celery, red onion, and dill pickles. Place them in a large mixing bowl.

    Prepare Hard-Boiled Eggs

    In a separate pot, place the eggs and cover with water. Bring to a boil, then remove from heat and let sit covered for 12 minutes. After that, transfer them to an ice bath to cool before peeling and chopping.

    Combine Ingredients

    Once the potatoes are cooked, drain them and let them cool slightly. Add the cooled potatoes to the mixing bowl with the chopped vegetables, and also add the chopped hard-boiled eggs.

    Prepare Dressing

    In a small bowl, whisk together the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, and fresh dill until well combined.

    Mix Salad

    Pour the dressing over the potato mixture and gently fold everything together until the potatoes and vegetables are well coated. Be careful not to mash the potatoes.

Serving

    Chill and Serve

    Cover the potato salad with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld. Serve chilled as a side dish.
