Soak the Beans
Rinse the dried Great Northern beans under cold water. Place them in a large bowl and cover them with 6 cups of water. Let them soak for at least 8 hours or overnight.

Prepare the Apple
Core and chop the medium apple into small pieces. Set aside.
Smoking

Prepare the Smoker
Soak the applewood chips in water for about 30 minutes. Preheat your smoker to 225°F (107°C).

Combine Ingredients
Drain and rinse the soaked beans. In a large bowl, combine the beans, chopped apple, vegetable broth, and the seasoning blend (smoked paprika, garlic powder, onion powder, brown sugar, black pepper, and salt).

Transfer to Smoker
Place the bean mixture into a suitable smoking container or pan. Add the soaked applewood chips on top.

Smoke the Beans
Smoke the beans for about 3-4 hours, or until they are tender and infused with the smoky flavor. Stir occasionally and add more applewood chips if needed.
