    Cook the Potatoes

    Wash the large potatoes thoroughly. Place them in a large pot and cover with water. Bring to a boil and cook until tender, approximately 15-20 minutes. Drain and let cool.

    Chop the Vegetables

    While the potatoes are cooling, dice the celery, red onion, and green bell pepper into small pieces. Chop the hard-boiled eggs into small chunks.

Mixing

    Prepare the Dressing

    In a large bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, salt, black pepper, paprika, and sugar. Mix well until smooth.

    Combine Ingredients

    Once the potatoes are cooled, peel and chop them into bite-sized pieces. Add the potatoes, diced vegetables, and chopped eggs to the dressing in the bowl. Stir gently to combine, making sure all ingredients are well-coated with the dressing.

Garnishing and Serving

    Garnish the Salad

    Sprinkle the chopped fresh parsley and additional paprika over the top of the potato salad for a colorful finish.

    Chill and Serve

    Cover the potato salad and refrigerate for at least 1 hour before serving to allow the flavors to meld. Serve chilled.
