Prepare the Ingredients
If using fresh corn, shuck the corn and cut the kernels off the cob. If using frozen corn, measure out 4 cups and set aside. Dice the jalapeños, removing seeds if you prefer less heat.

Soften the Cream Cheese
Allow the cream cheese to sit at room temperature for about 30 minutes or microwave it for 15 seconds to soften it.

Cook the Corn
In a large skillet, melt the butter over medium heat. Add the corn kernels and cook for about 5 minutes, stirring occasionally, until they begin to soften.

Mix in Cream Cheese
Reduce the heat to low and add the softened cream cheese to the skillet. Stir until the cream cheese is fully melted and incorporated with the corn mixture.

Season the Mixture
Add salt, black pepper, and cayenne pepper to the corn and cream cheese mixture. Mix well and cook for another 2 minutes, allowing the flavors to meld.

Garnish and Serve
Once cooked, remove from heat and transfer to a serving dish. Sprinkle chopped chives on top for garnish before serving warm.
