    Prepare the Chicken

    Start by rinsing the whole chicken under cold water and patting it dry with paper towels. Cut the chicken in half through the breastbone. You can use a sharp knife or kitchen shears for this.

    Season the Chicken

    In a small bowl, mix together the olive oil, salt, black pepper, paprika, garlic powder, and onion powder. Rub this mixture all over the chicken halves, ensuring to coat both sides evenly.

Smoking

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes before using to prevent them from burning too quickly. Preheat your smoker to 225°F (107°C).

    Smoke the Chicken

    Once the smoker is ready, drain the wood chips and add them to the smoker box. Place the seasoned chicken halves bone-side down on the smoker grate. Smoke the chicken for about 2 to 3 hours, or until the internal temperature reaches 165°F (74°C).

Serving

    Rest and Serve

    Once the chicken is done smoking, remove it from the smoker and let it rest for 10-15 minutes. This allows the juices to redistribute. Then, carve the chicken and serve it on a platter.
