Brisket Preparation

    Season the Brisket

    In a small bowl, mix together the smoked paprika, garlic powder, onion powder, black pepper, and salt. Rub this spice mixture all over the beef brisket. Ensure it is evenly coated.

    Smoke the Brisket

    Preheat your smoker to 225°F (107°C). Place the seasoned brisket in the smoker and cook for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C) for tender brisket. Use a water pan in the smoker to maintain moisture.

    Rest the Brisket

    Once the brisket is cooked, remove it from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

Garlic Aioli Preparation

    Mix the Aioli

    In a bowl, combine the mayonnaise, minced garlic, lemon juice, and salt. Stir until well mixed. Adjust seasoning to taste and set aside.

Sandwich Assembly

    Toast the Buns

    In a skillet, melt the butter over medium heat. Place the brioche buns cut side down in the skillet and toast until golden brown.

    Assemble the Sandwich

    Slice the rested brisket against the grain into thin slices. On the bottom half of each toasted brioche bun, layer the brisket, followed by two slices of Swiss cheese. If desired, add a handful of arugula. Spread the garlic aioli on the top half of the bun and place it on top of the sandwich.

    Serve the assembled brisket sandwiches warm with your choice of sides.
