    Wash and Cut Potatoes

    Wash the russet potatoes thoroughly under running water to remove any dirt. Peel the potatoes if desired, then cut them into even sticks, approximately 1/4 inch thick.

    Soak Potatoes

    Place the cut potato sticks in a large bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

Cooking

    Heat Oil

    In a deep fryer or a large, heavy-bottomed pot, pour in the vegetable oil and heat it to 350°F (175°C). Use a frying thermometer for accuracy.

    Dry Potatoes

    After soaking, drain the potatoes and pat them dry using paper towels. This will help prevent oil splatter when frying.

    Fry Potatoes

    Carefully lower a handful of dried potato sticks into the hot oil. Don’t overcrowd the pot; fry in batches if necessary. Fry for about 5-7 minutes or until golden brown.

    Drain and Season

    Once cooked, use a slotted spoon to remove the fries from the oil and transfer them to a plate lined with paper towels to absorb excess oil. While still hot, sprinkle with salt and black pepper to taste.
