Brisket Preparation

Prepare the Rub
In a bowl, mix together the smoked paprika, brown sugar, garlic powder, onion powder, black pepper, salt, cayenne pepper, and liquid smoke.

Season the Brisket
Rub the spice mixture over the entire surface of the brisket. Cover and let it marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare the Jalapenos
Slice the jalapenos into rings, removing the seeds if desired for less heat.

Make the Syrup
In a saucepan, combine sugar, apple cider vinegar, and water. Bring to a boil, then add the jalapeno rings. Reduce heat and simmer for 10 minutes.

Cool and Store
Remove from heat and let the jalapenos cool in the syrup. Store in a jar in the refrigerator until ready to use.
Beer Battered Onion Rings

Slice the Onions
Peel and slice the onions into 1/4 inch thick rings.

In a bowl, whisk together flour, cornstarch, baking powder, beer, and salt until smooth.

In a bowl, combine mayonnaise, hot sauce, and lemon juice. Stir until smooth and well combined.

Toast the Buns
Lightly toast the brioche buns on a grill or in a toaster.

Assemble the Sandwiches
Layer the smoked brisket on the bottom half of the bun, top with a slice of pepperjack cheese, add a generous amount of candied jalapenos, and finish with beer battered onion rings. Spread zesty sauce on the top half of the bun and place it on top to complete the sandwich.
