Prepare the Brisket
Trim any excess fat from the brisket and cut it into bite-sized pieces.

Brown the Brisket
In a large pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Add the brisket pieces and brown them on all sides. Remove the brisket and set aside.

Sauté the Vegetables
In the same pot, add another tablespoon of oil if needed. Add the chopped onion, bell pepper, garlic, and jalapeño. Sauté until the vegetables are soft, about 5-7 minutes.

Add Spices
Stir in cumin, chili powder, paprika, salt, and black pepper. Cook for another minute until fragrant.

Combine with Liquids
Return the browned brisket to the pot. Add beef broth and tomato sauce, stirring to combine. Bring to a simmer.

Simmer the Chili
Reduce heat to low, cover, and let the chili simmer for about 1.5 to 2 hours, stirring occasionally, until the brisket is tender.

Ladle the brisket chili into bowls. Top with sour cream, chopped cilantro, and shredded cheese as desired.
