Cranberry Juice Preparation

Prepare the Cranberries
Rinse the fresh cranberries under cold water to remove any debris or dirt. Discard any damaged or soft cranberries.

Cook the Cranberries
In a large pot, combine the rinsed cranberries and 4 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium and let it simmer for about 10-15 minutes, or until the cranberries have burst and softened.

Strain the Mixture
After simmering, remove the pot from heat. Using a fine mesh strainer or cheesecloth, strain the cranberry mixture into a large bowl or pitcher, pressing down on the solids to extract as much juice as possible. Discard the solids.

Sweeten the Juice
While the juice is still warm, stir in 1 cup of sugar until fully dissolved. Adjust sweetness to your taste. If desired, add 1 tablespoon of lemon juice for a touch of acidity.

Allow the cranberry juice to cool to room temperature, then refrigerate until chilled. Serve over ice in glasses.
