Preparation of Home Fries

1. Cook the Potatoes

Dice the potatoes and boil them in salted water until tender. Drain and set aside.

2. Sauté the Potatoes

In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Add drained potatoes, season with salt and pepper, and cook until golden brown. Set aside.

Preparation of Hollandaise Sauce

3. Make the Sauce

In a bowl, whisk the egg yolks and lemon juice together. Place the bowl over a pot of simmering water (double boiler) and gradually whisk in melted butter until the sauce thickens. Season with salt and paprika.

Poaching Eggs

4. Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl and gently slide into the simmering water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

Assembly

5. Assemble the Dish

Split the English muffins and toast them. On each half, place a slice of ham or bacon, a poached egg, and drizzle with hollandaise sauce. Serve with home fries on the side.
