    Prepare Milk

    In a large pot, heat the whole milk over medium heat until it reaches about 190°F (88°C), stirring occasionally to prevent scorching.

    Add Vinegar

    Once the milk is heated, remove it from the heat and slowly stir in the white vinegar. Let it sit for about 10 minutes to allow the curds to form.

    Strain Curds

    After 10 minutes, line a colander with cheesecloth and pour the curds and whey mixture into it. Let it drain for about 30 minutes.

    Add Salt and Rennet

    Once the curds are drained, transfer them to a bowl. Add salt and rennet, mixing thoroughly. If using herbs, add them at this stage as well.

    Mold the Cheese

    Press the curds into a cheese mold or shape it by hand into a ball. Wrap in cheesecloth and place a weight on top for about 1 hour.

    Refrigerate

    Once the cheese is formed, unwrap it and store it in an airtight container in the refrigerator. Allow it to chill for at least 2 hours before serving.
