    Chop the Vegetables

    Wash and chop the carrots, bell pepper, zucchini, cauliflower, and green beans into bite-sized pieces.

    Prepare the Aromatics

    Finely chop the onion, garlic, and ginger. Set aside.

Cooking

    Heat the Oil

    In a large pot or skillet, heat the vegetable oil over medium heat.

    Sauté the Aromatics

    Add the chopped onion, garlic, and ginger to the pot. Sauté for about 3-4 minutes until the onion is translucent.

    Add the Spices

    Stir in the curry powder and turmeric powder, and cook for another minute until fragrant.

    Add the Vegetables

    Add the chopped carrots, bell pepper, zucchini, cauliflower, and green beans to the pot. Stir well to coat the vegetables with the spice mixture.

    Add Coconut Milk

    Pour in the coconut milk and stir to combine. Bring the mixture to a gentle simmer.

    Season with salt and black pepper to taste. Cover the pot and let it simmer for about 15-20 minutes, or until the vegetables are tender.
