Method

Preparation

  1. 1

    Make the Marinade

In a large bowl, combine yogurt, lemon juice, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and oil. Mix well until all ingredients are fully combined.

  2. 2

    Marinate the Fish

Cut the white fish fillets into bite-sized pieces. Add the fish to the marinade and coat evenly. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes (up to 2 hours for a more intense flavor).

Grilling

  1. 3

    Preheat the Grill

Preheat your grill to medium-high heat (about 200°C or 400°F). If using a charcoal grill, prepare the coals until they are covered with white ash.

  2. 4

    Skewer the Fish

If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated fish pieces onto the skewers, leaving a little space between each piece.

  3. 5

    Grill the Fish

Place the skewers on the preheated grill. Grill for 10-12 minutes, turning occasionally, until the fish is opaque and flakes easily with a fork. Brush with extra oil if desired.

  4. 6

    Serve

Remove the skewers from the grill. Serve hot with lemon wedges and garnish with fresh coriander.
