Cooking Ugali
1. Boil Water
In a large pot, bring 4 cups of water to a rolling boil over high heat.
2. Add Maize Flour
Once the water is boiling, reduce the heat to medium and slowly add 2 cups of maize flour while stirring continuously with a wooden spoon to prevent lumps from forming.
3. Stir and Cook
Continue to stir the mixture vigorously for about 5-10 minutes until it thickens and pulls away from the sides of the pot, forming a dough-like consistency.
4. Cook Through
Reduce the heat to low, cover the pot, and allow the ugali to cook for an additional 5-10 minutes.
5. Check Consistency
After cooking, check that the ugali is firm and holds its shape. If it is still too soft, you can cook it for a few more minutes.
6. Serve
Remove the ugali from the pot and shape it into a round or oval loaf. Serve hot with your choice of stew.
