    Rinse the Rice

    Thoroughly rinse 2 cups of basmati rice under cold water until the water runs clear. This helps to remove excess starch.

    Chop the Vegetables

    Dice the carrots, bell pepper, and tomato. Slice the onion and chop the green beans.

Cooking

    Heat the Oil

    In a large pot, heat 3 tablespoons of vegetable oil or ghee over medium heat.

    Sauté Onions and Spices

    Add the sliced onions and cumin seeds to the pot. Sauté until the onions are translucent. Then add coriander powder, turmeric powder, garam masala, salt, and black pepper. Stir well.

    Add Vegetables

    Add the diced carrots, green peas, bell pepper, diced tomato, and chopped green beans to the pot. Stir and sauté for about 5 minutes until the vegetables are slightly tender.

    Add Rice and Water

    Add the rinsed basmati rice to the pot and mix well with the vegetables and spices. Pour in 4 cups of water and bring to a boil.

    Simmer

    Once boiling, reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes until the rice is cooked and the water is absorbed.

Serving

    Fluff and Serve

    Once cooked, remove the pot from heat. Let it sit covered for 5 minutes, then fluff the rice with a fork. Garnish with chopped cilantro and fried onions before serving.
