Method
Preparing Ugali

Boil the Water
In a large saucepan, bring 4 cups of water to a boil over medium-high heat.

Add Cornmeal
Once the water is boiling, slowly pour in 2 cups of cornmeal while stirring continuously with a wooden spoon to prevent lumps.

Stir and Cook
Continue stirring the mixture for about 5-7 minutes until it thickens and pulls away from the sides of the pan.

Season with Salt
Add 1 teaspoon of salt and mix well to incorporate.

Shape and Serve
Once cooked, shape the ugali into a round mound using a wet spatula or your hands. Serve warm.

Sauté the Onion and Garlic
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced onion and minced garlic, cooking until the onion becomes translucent.

Add Tomato
Stir in the diced tomato and cook for an additional 2-3 minutes until the tomato softens.

Cook the Collard Greens
Add the chopped collard greens to the skillet and stir well. Cook for 5-7 minutes until the greens are wilted and tender.

Season and Serve
Season with 1 teaspoon of salt and 1 teaspoon of black pepper. Mix well and cook for another minute. Serve warm alongside ugali.
