Fish Cakes

Method

Fish Cakes

  1. 1

    Prepare the Potatoes

In a pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and mash the potatoes in a large bowl.

  2. 2

    Cook the Fish

In a separate pan, poach the fish fillets in boiling water for about 8-10 minutes, or until cooked through. Remove from the water and flake the fish into small pieces.

  3. 3

    Mix Ingredients

In the bowl with the mashed potatoes, add the flaked fish, chopped onion, minced garlic, chopped coriander, chili powder, salt, and black pepper. Mix until well combined.

  4. 4

    Form Cakes

Add the beaten egg to the mixture and mix well. Shape the mixture into small patties or cakes, about 3 inches in diameter.

  5. 5

    Coat with Bread Crumbs

Roll each fish cake in bread crumbs until well coated.

  6. 6

    Fry the Cakes

In a frying pan, heat vegetable oil over medium heat. Fry the fish cakes for about 3-4 minutes on each side, or until golden brown. Remove and drain on paper towels.

Mango and Chili Sauce

  1. 7

    Prepare the Sauce

In a small bowl, combine the diced mango, finely chopped red chili, lime juice, honey, and a pinch of salt. Mix well until all ingredients are blended.

  2. 8

    Adjust Seasoning

Taste the sauce and adjust the seasoning if needed, adding more lime juice or honey to balance the flavors.
