Dough Preparation

Mix the Dough
In a large mixing bowl, combine all-purpose flour, caraway seeds, and salt. Add oil and mix well until the mixture resembles coarse crumbs.

Knead the Dough
Gradually add water little by little, kneading until a smooth and soft dough forms. Cover the dough with a damp cloth and let it rest for 30 minutes.

Add Spices and Vegetables
Stir in grated ginger and green chili. Cook for another minute. Add boiled potatoes and green peas. Mix well.

Season the Filling
Add coriander powder, garam masala, and salt. Cook for 5-7 minutes, stirring occasionally. Remove from heat and stir in lemon juice and chopped cilantro. Let it cool.
Assembling and Frying

Roll Out the Dough
Divide the rested dough into small balls. Roll each ball into a thin circle about 6 inches in diameter.

Shape the Samosas
Cut the rolled circle in half. Take one half and form a cone shape by folding it, sealing the edge with a little water. Fill the cone with the prepared filling and seal the open edge by pressing it together.

Fry the Samosas
Heat oil in a deep frying pan over medium heat. Fry the samosas in batches until golden brown and crispy. Remove and drain on paper towels.
