Mousse Preparation

    Prepare the Gelatin

    In a small bowl, combine the gelatin powder and water. Let it sit for about 5 minutes until it blooms.

    Blend Mangoes

    Peel and chop the ripe mangoes. Place them in a blender and blend until smooth. Measure out 2 cups of mango puree.

    Mix Ingredients

    In a mixing bowl, combine the mango puree, granulated sugar, and lime juice. Stir until the sugar has dissolved completely.

    Incorporate Gelatin

    Gently heat the bloomed gelatin in the microwave for about 10-15 seconds until melted. Add the gelatin to the mango mixture and stir well to combine.

    Whip the Cream

    In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to overwhip.

    Fold in Cream

    Gently fold the whipped cream into the mango mixture with a spatula until fully incorporated. Be careful not to deflate the mousse.
