    Prepare the Tomato Sauce

    In a blender, combine the tomatoes, bell pepper, half of the chopped onion, garlic, and ginger. Blend until smooth.

    Cook the Sauce

    In a large pot, heat the vegetable oil over medium heat. Add the remaining chopped onion and sauté until translucent. Pour in the blended tomato mixture and cook for about 15-20 minutes, stirring occasionally, until it thickens and the oil separates from the sauce.

    Add Spices

    Stir in the bay leaves, thyme, curry powder, salt, black pepper, and chili powder (if using). Let it cook for an additional 5 minutes.

    Add Rice and Broth

    Add the rice to the pot, stirring to coat it with the sauce. Pour in the chicken or vegetable broth, and bring the mixture to a boil.

    Simmer the Rice

    Once boiling, reduce the heat to low, cover the pot with a lid, and let it simmer for about 25-30 minutes, or until the rice is cooked and liquid is absorbed. Avoid stirring during this time to prevent the rice from becoming mushy.

    Once the rice is cooked, remove the pot from heat and let it sit for an additional 10 minutes, still covered.

    Fluff the rice with a fork, adjust seasoning as necessary, and serve with your choice of protein or vegetables.
