Preparing the Dough Balls

    Mixing Ingredients

    In a mixing bowl, combine the khoya, all-purpose flour, and baking powder. Mix well until the ingredients are evenly incorporated.

    Adding Milk

    Gradually add milk to the mixture while kneading to form a soft, smooth dough. Make sure the dough is not too sticky; if so, add a little more flour.

    Shaping the Balls

    Divide the dough into small equal portions and roll them into smooth balls, approximately the size of a marble.

Making the Sugar Syrup

    Combining Ingredients

    In a saucepan, combine sugar and water. Stir well and bring to a boil over medium heat.

    Flavoring the Syrup

    Once the sugar has dissolved, add crushed cardamom pods and rose water. Reduce the heat and let the syrup simmer for about 10 minutes until it thickens slightly.

    Cooling the Syrup

    Remove from heat and allow the syrup to cool to room temperature while you prepare the dough balls.

Frying the Dough Balls

    Heating the Oil

    In a deep frying pan, heat ghee or oil over medium heat until hot but not smoking.

    Frying the Balls

    Carefully drop the dough balls into the hot oil. Fry them in batches, turning gently until they are golden brown on all sides. This should take about 5-7 minutes.

    Soaking in Syrup

    Once fried, remove the balls from the oil and let them drain on paper towels. While still warm, immerse them in the cooled sugar syrup. Allow them to soak for at least 30 minutes before serving.
