For the Grilled Tilapia

    Prepare the Marinade

    In a small bowl, whisk together olive oil, lemon juice, minced garlic, paprika, salt, and black pepper until combined.

    Marinate the Fish

    Place the tilapia fillets in a shallow dish and pour the marinade over them. Cover and refrigerate for at least 30 minutes.

    Grill the Fish

    Preheat the grill to medium-high heat. Remove the tilapia from the marinade and place on the grill. Cook for 4-5 minutes on each side until the fish flakes easily with a fork.

For the Coconut Rice

    Rinse the Rice

    Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

    Cook the Rice

    In a medium saucepan, combine rinsed rice, coconut milk, water, and salt. Bring to a boil over medium heat. Once boiling, reduce heat to low, cover, and simmer for 15 minutes or until the rice is tender and liquid is absorbed.

    Fluff the Rice

    Remove the rice from heat and let it sit covered for 5 minutes. Then, fluff with a fork before serving.

    Slice the bell pepper, zucchini, and carrot into thin strips.

    Sauté the Vegetables

    In a large skillet, heat olive oil over medium heat. Add the sliced vegetables, salt, and black pepper. Sauté for 5-7 minutes until the vegetables are tender but still crisp.
