    In a mixing bowl, combine chickpea flour, rice flour, cumin seeds, coriander powder, turmeric powder, and salt. Mix well.

    Add Water

    Gradually add water to the flour mixture, stirring continuously to avoid lumps. The batter should be thick enough to coat the back of a spoon.

    Incorporate Vegetables

    Fold in the finely chopped mixed vegetables, sliced onion, and chopped green chili into the batter until evenly coated.

    Heat the Oil

    In a deep frying pan or pot, heat the oil over medium heat until hot.

    Fry the Bhajis

    Using a spoon, drop the batter mixture in small portions into the hot oil. Fry in batches, ensuring not to overcrowd the pan. Cook until golden brown and crispy, about 3-4 minutes on each side.

    Drain the Oil

    Once cooked, use a slotted spoon to remove the bhajis from the oil and place them on paper towels to drain excess oil.

    In a blender, combine fresh mint leaves, cilantro, green chili, lemon juice, and salt. Blend until smooth. Adjust seasoning as needed.
