Preparation
1. Soak the Rice
Wash the basmati rice under cold water until the water runs clear. Soak in water for 30 minutes.
2. Marinate the Chicken
In a bowl, combine chicken pieces, yogurt, ginger-garlic paste, biryani masala, turmeric powder, cumin seeds, coriander powder, red chili powder, and salt. Mix well and let it marinate for at least 1 hour.
Cooking
3. Fry Onions
In a large pot, heat vegetable oil or ghee over medium heat. Add thinly sliced onions and fry until golden brown. Remove half for garnishing.
4. Cook Chicken
Add the marinated chicken and chopped tomatoes to the pot. Cook until the chicken is browned and cooked through, about 10-15 minutes.
5. Add Water and Rice
Add 4 cups of water to the pot and bring to a boil. Drain the soaked rice and add it to the boiling water. Stir gently.
6. Simmer
Cover the pot with a lid and reduce the heat to low. Let it simmer for 20-25 minutes until the rice is fully cooked and water is absorbed.
Garnishing and Serving

Once cooked, fluff the biryani with a fork. Top with chopped cilantro, mint leaves, fried onions, and serve hot.
