Make the Batter
In a large mixing bowl, combine chickpea flour, rice flour, turmeric powder, cumin seeds, red chili powder, salt, and baking soda. Gradually add water to form a smooth batter that coats the back of a spoon.

Add Vegetables to Batter
Fold the chopped vegetables into the batter until well mixed. Ensure the vegetables are evenly coated.

Heat the Oil
In a deep frying pan, heat the oil over medium heat until hot (around 350°F or 175°C).

Fry the Bhaji
Using a tablespoon, drop spoonfuls of the vegetable batter into the hot oil. Fry in batches, making sure not to overcrowd the pan. Fry until golden brown and crispy, about 4-5 minutes. Remove and drain on paper towels.

Combine Ingredients
In a saucepan, combine tamarind pulp, brown sugar, water, salt, cumin powder, and red chili powder.

Cook the Sauce
Heat the mixture over medium heat, stirring continuously until the sugar dissolves and the sauce thickens slightly, about 5-7 minutes. Remove from heat and let it cool.
