Prepare the Beef
Cut the beef chuck roast into 1-inch cubes. Season the beef with salt and black pepper.

Sear the Beef
In a large skillet, heat a tablespoon of oil over medium-high heat. Add the beef cubes in batches and sear until browned on all sides, about 5 minutes per batch. Transfer the beef to a slow cooker.

Cook the Stew
Cover the slow cooker and cook on low for 7 to 8 hours, or until the beef is tender and the vegetables are cooked through.

Thicken the Stew
In a small bowl, combine cornstarch and water to create a slurry. Add the slurry to the stew during the last 30 minutes of cooking, stirring well to thicken.

Serve the Stew
Once cooked, remove bay leaves and serve the beef stew hot in bowls. Enjoy with crusty bread if desired.
