Preparation

    Cook the Noodles

    Bring a large pot of water to a boil. Add the yakisoba noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, prepare the vegetables by shredding the cabbage, julienning the carrot, and slicing the bell pepper. Chop the green onions and set aside.

    Prepare the Chicken

    Slice the chicken breast into thin strips. Season lightly with salt and pepper.

Cooking

    Stir-Fry the Chicken

    In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the chicken strips and stir-fry until cooked through, about 5-7 minutes. Remove from the skillet and set aside.

    Cook the Vegetables

    In the same skillet, add another tablespoon of oil. Add the cabbage, carrot, and bell pepper. Stir-fry for about 3-4 minutes until the vegetables are tender-crisp.

    Add Noodles and Sauce

    Add the cooked yakisoba noodles to the skillet with the vegetables. Pour in the soy sauce, oyster sauce, ketchup, mirin, salt, and black pepper. Toss everything together and cook for an additional 2-3 minutes until heated through.

    Add Eggs

    Push the noodle mixture to one side of the skillet. Crack the eggs into the empty side and scramble them until just cooked. Then mix them into the noodles.

    Finish with Chicken and Green Onions

    Add the cooked chicken back to the skillet along with the chopped green onions. Stir everything together and cook for another minute until combined and heated through.

Serving

    Garnish and Serve

    Remove the yakisoba from heat. Serve hot, garnished with nori strips and sesame seeds.
