Prepare the Noodles

    Cook Udon Noodles

    Bring 2 liters of water to a boil in a large pot. Add the udon noodles and cook according to the package instructions, usually about 8-10 minutes, until they are tender but still chewy. Stir occasionally to prevent sticking.

    Once cooked, drain the noodles in a colander and rinse under cold running water to stop the cooking process. Set aside.

Make the Broth

    In a separate pot, combine the dashi stock, soy sauce, mirin, and salt. Bring to a simmer over medium heat, stirring occasionally until well mixed. Allow to simmer for 5-10 minutes to enhance the flavors.

Assemble the Udon

    In serving bowls, add a portion of the cooked udon noodles. Ladle the hot dashi broth over the noodles until they are submerged.
