Preparation

    Prepare the Coffee

    Brew 1 cup of espresso or strong coffee. Allow it to cool to room temperature, then set aside.

    Separate the Eggs

    Carefully separate the egg whites from the yolks. Place the whites in a clean bowl and the yolks in another large mixing bowl.

    Make the Mascarpone Mixture

    Add 3 tablespoons of granulated sugar to the egg yolks and whisk until the mixture becomes pale and fluffy. Then gently fold in 1 cup of mascarpone cheese until smooth.

    Whip the Cream

    In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Carefully fold the whipped cream into the mascarpone mixture until well combined.

    Beat the Egg Whites

    Using a mixer, beat the egg whites until stiff peaks form. Gently fold the beaten egg whites into the mascarpone mixture to maintain airiness.

Assembly

    Dip the Ladyfingers

    Quickly dip each ladyfinger cookie into the cooled coffee one at a time, making sure not to soak them. Place a layer of dipped ladyfingers at the bottom of your serving dish.

    Layer the Mascarpone Mixture

    Spread half of the mascarpone mixture over the layer of ladyfingers, smoothing it out evenly.

    Repeat Layers

    Add another layer of dipped ladyfingers on top of the mascarpone mixture, followed by the remaining mascarpone mixture. Smooth the top layer with a spatula.

Finishing Touches

    Chill the Tiramisu

    Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld.

    Serve and Garnish

    Before serving, dust the top of the tiramisu with cocoa powder and add dark chocolate shavings if desired. Slice and serve chilled.
