Prepare the batter

    Mix dry ingredients

    In a large bowl, combine the all-purpose flour, baking powder, and salt. Mix well.

    Add wet ingredients

    In a separate bowl, whisk together the dashi stock, eggs, and soy sauce. Gradually pour the wet mixture into the dry ingredients while stirring until smooth.

Prepare the fillings

    Chop ingredients

    Finely chop the cooked octopus, green onions, and pickled ginger. Set aside.

Cook the takoyaki

    Preheat the takoyaki pan

    Heat the takoyaki pan over medium heat and lightly oil the molds with vegetable oil.

    Fill the molds

    Pour the batter into each mold, filling them about 3/4 full. Add a small amount of the octopus, green onions, tempura scraps, and pickled ginger into each mold.

    Cook and flip

    Cook the takoyaki for about 3-4 minutes until the bottom is golden brown. Use a skewer or chopsticks to flip each ball 90 degrees. Cook for another 3-4 minutes until all sides are golden brown.

    Remove from pan

    Once cooked, use a skewer to gently remove the takoyaki balls from the pan and place them on a serving plate.

Serve and garnish

    Add toppings

    Drizzle takoyaki sauce and mayonnaise over the balls. Sprinkle bonito flakes and aonori on top for garnish.
