Preparing Sushi Rice

Rinse and Cook Rice
Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or saucepan. Cook according to the rice cooker's instructions or bring to a boil, cover, and reduce heat to low for about 20 minutes until water is absorbed.

Season the Rice
In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice is cooked, transfer it to a large bowl and gently fold in the vinegar mixture. Allow it to cool to room temperature.
Making Spicy Tuna Mixture

Prepare Tuna
Dice the sushi-grade tuna into small cubes and place it in a bowl.

Mix Ingredients
Add mayonnaise, sriracha, sesame oil, chopped green onions, and soy sauce to the diced tuna. Mix well until the tuna is evenly coated with the spicy sauce.
Assembling and Frying

Form Crispy Rice
Wet your hands to prevent sticking, then take a small handful of sushi rice and form it into rectangular or square shapes, about 1 inch thick.

Fry Rice
Heat vegetable oil in a non-stick skillet over medium-high heat. Once hot, carefully place the rice pieces in the skillet and fry until golden brown and crispy, about 2-3 minutes on each side. Remove and drain on paper towels.

Top with Spicy Tuna and Avocado
Place a generous spoonful of the spicy tuna mixture on top of each crispy rice piece. Slice the avocado and place a piece on top of the tuna.
Garnishing

Sprinkle sesame seeds and microgreens or cilantro on top of each piece. Drizzle with soy sauce if desired.
