Clean the Soft Shell Crabs
Rinse the soft shell crabs under cold running water and pat them dry with paper towels. Remove the gills and any other inedible parts.

Prepare the Breading Station
In a shallow dish, combine the all-purpose flour, cornstarch, salt, and black pepper. In another bowl, beat the eggs and mix with buttermilk until well combined.

Heat the Oil
In a deep frying pan or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Bread the Crabs
Dip each soft shell crab first into the egg and buttermilk mixture, letting any excess drip off, then dredge in the flour and cornstarch mixture until fully coated.

Fry the Crabs
Carefully place the breaded crabs into the hot oil, frying in batches if necessary to avoid overcrowding. Fry for 3-4 minutes on each side until golden brown and crispy.

Drain and Cool
Use a slotted spoon to remove the crabs from the oil and place them on a plate lined with paper towels to drain excess oil.
