Prepare the Shrimp
Rinse the shrimp under cold water, and pat them dry with paper towels. Season with salt and black pepper, and set aside.

Mix the Batter
In a mixing bowl, combine all-purpose flour, cornstarch, and baking powder. In another bowl, whisk the egg yolk with ice-cold water. Gradually add the wet ingredients to the dry ingredients, mixing lightly until just combined. Do not overmix; the batter should be lumpy.

Heat the Oil
In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Use a thermometer for accuracy.

Dip and Fry the Shrimp
Dip each shrimp into the batter, allowing excess to drip off. Carefully place the shrimp into the hot oil, frying in batches to avoid overcrowding. Fry for about 2-3 minutes or until golden brown and crispy.

Drain the Shrimp
Once cooked, remove the shrimp from the oil and place them on a plate lined with paper towels to drain excess oil.
