Prepare the Salad Base

    Rehydrate the Seaweed

    Place the dried seaweed in a bowl and cover it with warm water. Let it soak for about 10-15 minutes until it expands and softens. Drain and gently squeeze out excess water.

    Prepare the Vegetables

    Thinly slice the cucumber, carrot, and radish. You can use a mandoline for uniform slices if available.

Make the Marinade

    Combine Marinade Ingredients

    In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, sugar, and chili flakes (if using) until the sugar is dissolved.

    Add Sesame Seeds

    Stir in the sesame seeds into the marinade mixture.

Combine and Serve

    Mix Ingredients

    In a large bowl, combine the rehydrated seaweed, sliced cucumber, carrot, and radish. Pour the marinade over the salad and toss well to coat all ingredients evenly.

    Garnish

    Chop the green onions and sprinkle them over the salad for extra flavor and garnish.

    Serve

    Let the salad marinate for at least 20 minutes in the refrigerator before serving to allow flavors to meld. Serve cold as an appetizer or side dish.
