Dry the Potato Slices
After soaking, drain the potatoes and spread them out on a clean kitchen towel or paper towels. Pat them dry to remove as much moisture as possible.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat 4 cups of vegetable oil over medium-high heat until it reaches 350°F (175°C). You can use a thermometer to check the temperature.

Fry the Potato Slices
Carefully add a handful of the dried potato slices into the hot oil, being sure not to overcrowd the pot. Fry for about 2-4 minutes or until the chips turn golden brown and crispy.

Drain and Season
Using a slotted spoon, remove the chips from the oil and place them on a plate lined with paper towels to drain excess oil. While they are still hot, sprinkle with salt, pepper, and paprika (if desired) to taste.

Repeat
Repeat the frying process with the remaining potato slices, making sure to maintain the oil temperature. Once all chips are fried, allow them to cool completely.
