Prepare the Broth

Combine Broth Ingredients
In a large pot, combine the chicken broth, soy sauce, mirin, sesame oil, grated ginger, and minced garlic. Stir well to incorporate all the ingredients.

Simmer the Broth
Bring the mixture to a gentle boil over medium heat, then reduce to low heat. Allow it to simmer for at least 15 minutes to let the flavors meld together.
Cook the Noodles and Pork

Cook the Ramen Noodles
While the broth is simmering, bring another pot of water to a boil. Add the ramen noodles and cook according to package instructions, usually about 3-4 minutes. Drain and set aside.

Cook the Pork Belly
In a separate skillet, cook the sliced pork belly over medium heat until crispy and browned, about 5-7 minutes. Remove from heat and set aside.
Assembly

Prepare the Bowls
In serving bowls, place a portion of the cooked ramen noodles. Pour the hot broth over the noodles until they are submerged.

Add Toppings
Top the ramen with crispy pork belly, baby spinach, chopped green onions, and a soft-boiled egg cut in half. Add a piece of nori on the side and drizzle with chili oil to taste.
