Method

Coleslaw Preparation

    Mix the Vegetables

    In a large bowl, combine the shredded green cabbage and shredded carrots.

    Prepare the Dressing

    In a separate bowl, whisk together the vegan mayonnaise, apple cider vinegar, maple syrup, salt, and black pepper until smooth.

    Combine

    Pour the dressing over the cabbage and carrots. Toss well to combine and coat the vegetables evenly. Refrigerate for at least 30 minutes to allow flavors to meld.

Russian Dressing Preparation

    Mix Ingredients

    In a small bowl, combine the vegan mayonnaise, ketchup, Dijon mustard, sweet relish, and Worcestershire sauce. Stir until well mixed.

Sandwich Assembly

    Prepare the Bread

    Take the whole grain sandwich bread slices and lay them out on a clean surface.

    Spread the Russian Dressing

    Spread a generous amount of the prepared Russian dressing on two slices of the bread.

    Layer the Turkey and Cheese

    Place 4 oz of plant-based turkey slices on top of the Russian dressing, followed by 2 slices of plant-based provolone cheese.

    Top the cheese with a generous scoop of the prepared coleslaw.

    Place a lettuce leaf on top of the coleslaw, then place the other slice of bread on top to complete the sandwich.
