Prepare the Potatoes
Scrub the Russet potatoes under running water to remove any dirt. Pat them dry with a clean towel.

Cut the Potatoes
Using a sharp knife, cut the potatoes into fries. Aim for uniform thickness (about 1/4 to 1/2 inch) to ensure even cooking.

Soak the Fries
Place the cut fries in a large bowl of cold water and let them soak for at least 30 minutes. This step helps to remove excess starch and results in crispier fries.

Heat the Oil
In a large, heavy-bottomed pot or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Use a thermometer to check the temperature.

Dry the Fries
Remove the soaked fries from the water and pat them dry thoroughly with a towel. This is crucial to avoid oil splatters and ensures crispiness.

Fry the Potatoes
Carefully add a handful of fries to the hot oil (avoid overcrowding the pot). Fry them for about 5-6 minutes or until they are golden brown and crispy.

Using a slotted spoon, remove the fries from the oil and place them on a plate lined with paper towels to absorb excess oil.
