Prepare the Mochi Dough

    Mix Ingredients

    In a microwave-safe bowl, combine glutinous rice flour and sugar. Stir in water until the mixture is smooth and there are no lumps.

    Cook the Mixture

    Cover the bowl with plastic wrap and microwave the mixture on high for 1 minute. Remove from microwave, stir, and then cover again. Microwave for an additional 1 minute. Stir again, then microwave for a final 30 seconds. The dough should be slightly translucent and sticky.

    Dust the Surface

    Sprinkle cornstarch generously on a clean surface to prevent sticking. Turn the mochi dough onto the cornstarch-dusted surface.

    Shape the Mochi

    Using your hands, flatten the mochi dough into a rectangle about 1/4 inch thick. Dust the top with more cornstarch to prevent sticking.

Assemble the Mochi Ice Cream

    Scoop the Ice Cream

    Scoop out small balls of ice cream (about 1 tablespoon each) and place them on a tray lined with parchment paper. Return the tray to the freezer to firm up for about 10 minutes.

    Cut the Mochi

    Using a knife or pizza cutter, cut the flattened mochi dough into squares, about 3 inches on each side.

    Wrap the Ice Cream

    Take a square of mochi, place a ball of ice cream in the center, and stretch the mochi around the ice cream, pinching to seal it. Make sure the ice cream is completely wrapped.

    Freeze the Mochi Ice Cream

    Place the filled mochi ice cream back on the parchment-lined tray and return it to the freezer. Freeze for at least 2 hours to set completely.
