Prepare Sushi Rice
1. Rinse and Cook the Rice
Rinse the sushi rice under cold water until the water runs clear. Drain well. In a rice cooker, combine the rinsed rice and water. Cook according to the rice cooker's instructions.
2. Season the Rice
Once the rice is cooked, transfer it to a large bowl. In a small saucepan, heat rice vinegar, sugar, and salt over low heat until dissolved. Pour the mixture over the rice and gently fold it in using a spatula. Allow the rice to cool to room temperature.
Prepare Spicy Crab Filling
3. Mix the Filling
In a medium bowl, shred the imitation crab meat and add mayonnaise, Sriracha sauce, chopped green onions, sesame oil, and lemon juice. Mix well until combined.
Assemble the Burrito
4. Prepare the Nori Sheets
Lay a nori sheet shiny side down on a bamboo sushi mat or clean surface.
5. Add Rice and Filling
Wet your hands to prevent sticking. Take about 1/2 cup of sushi rice and spread it evenly over the nori, leaving about 1 inch at the top edge. Place a portion of the spicy crab filling in the center, along with julienned cucumber and slices of avocado.
6. Roll the Burrito
Using the bamboo mat, start rolling the nori tightly from the bottom, tucking in the filling as you go. Continue rolling until you reach the edge of the nori. Use a little water to seal the edge.
7. Cut and Serve
Using a sharp knife, slice the burrito into bite-sized pieces. Sprinkle with sesame seeds and serve immediately.
