Prep the Vegetables
Thinly slice the onion and tomato. Rinse and dry the lettuce leaves.

Grill the Onions
In a skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced onions and sauté until they are soft and caramelized, about 5-7 minutes. Season with salt and pepper to taste.
Assembling the Sandwich

Layer the Ingredients
On one slice of ciabatta bread, layer the Italian deli meats evenly. Top with the grilled onions, followed by the provolone cheese.

Add Fresh Ingredients
Add the lettuce leaves and tomato slices on top of the provolone cheese. Drizzle the remaining tablespoon of olive oil over the fresh ingredients, and season with salt and pepper to taste.

Grill the Sandwich
Place the second slice of ciabatta on top to close the sandwich. Heat a grill pan or panini press over medium heat. If using a grill pan, lightly brush the outside of the sandwich with olive oil. Grill for 3-5 minutes on each side, or until the bread is golden brown and the cheese has melted.

Remove the sandwich from the grill, let it cool for a minute, then slice in half and serve while hot.
