Method

Prepare Sushi Rice

    Wash the Rice

    Rinse the sushi rice under cold water until the water runs clear. This helps to remove excess starch.

    Cook the Rice

    Combine the washed sushi rice and water in a rice cooker. Cook according to the rice cooker instructions until the rice is tender.

    Season the Rice

    In a small bowl, combine rice vinegar, sugar, and salt. Microwave for 20-30 seconds until the sugar dissolves. Gently fold the mixture into the cooked rice and let it cool.

Prepare Spicy Tuna Filling

    Dice the Tuna

    Cut the sushi-grade tuna into small cubes.

    Mix Ingredients

    In a bowl, combine tuna, mayonnaise, Sriracha sauce, and chopped green onions. Mix well and set aside.

Prepare California Roll Filling

    Prepare Ingredients

    Shred the imitation crab meat, slice the avocado, and julienne the cucumber.

Assemble Sushi

    Lay Out Nori

    Place a nori sheet on a bamboo sushi mat with the shiny side facing down.

    Add Sushi Rice

    Wet your hands to prevent sticking, then take a handful of sushi rice and spread it evenly over the nori, leaving a 1-inch border at the top.

    Fill with Ingredients

    For Spicy Tuna Rolls: Place a line of spicy tuna filling along the bottom edge of the rice. For California Rolls: Place a line of imitation crab, avocado, and cucumber.

    Roll the Sushi

    Using the mat, carefully roll the sushi away from you, pressing gently to shape it into a cylinder. Seal the edge with a bit of water.

    Slice the Rolls

    Using a sharp knife, slice the sushi roll into 6-8 pieces. Wipe the knife with a damp cloth between cuts for clean slices.

    Garnish and Serve

    Sprinkle sesame seeds on top if desired. Serve with soy sauce, pickled ginger, and wasabi.
