    Trim any excess fat from the ribeye steak and slice it thinly against the grain. This helps ensure tenderness.

    Prepare the Vegetables

    Slice the onion and mushrooms thinly. If using sweet or hot peppers, slice them into strips or rings as desired.

    Sauté the Vegetables

    In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions and cook until they start to soften, about 3-4 minutes. Then, add the mushrooms and peppers, cooking for another 5-7 minutes until all the vegetables are tender. Season with salt and pepper, then transfer to a plate and set aside.

    Cook the Steak

    In the same skillet, add the remaining tablespoon of olive oil and increase the heat to medium-high. Add the sliced ribeye steak and season with salt and pepper. Cook for 5-7 minutes, stirring frequently until the steak is browned and cooked to your desired level of doneness.

    Return the sautéed vegetables to the skillet with the cooked steak. Mix well to combine and let cook for an additional minute to heat through.

    Lay the slices of white American cheese over the steak and vegetable mixture. Cover the skillet with a lid and allow the cheese to melt, about 2-3 minutes.

    While the cheese is melting, slice the hoagie rolls lengthwise but not all the way through, creating a pocket for the filling.
